Chocolate Chip
Cookies with Cherries

I just made these yummy
cookies. They are delicious. I found the recipe in my latest culinary
mystery that I just read; Dark Tort by Diane Mott Davidson.
¾ cup softened butter
¼ cup shortening
2 cups brown sugar
2 eggs
½ cup buttermilk
3¼ cups flour
1 tsp baking soda
1 tsp salt
2 cups chopped pecans
2 cups dried cherries
2 cups chocolate chips
1. In a mixer bowl, cream butter and shortening for 2 minutes. Gradually
add sugar. Beat for 5 minutes until light and fluffy. Add eggs and
buttermilk. Stir until combined.
2. In a bowl, combine flour, baking soda and salt. Gently stir into
batter. Stir in nuts, cherries and chocolate. Shape into a ball. Cover
with plastic wrap. Chill for 1 hour or overnight.
3. Using an ice cream scoop, place balls onto a parchment lined baking
sheet. Flatten with the heal of your hand. Bake in a preheated 375ºF
oven for 8 - 11 minutes.
Makes 8 dozen. |
