Pasta with Lemon, Spinach and Parmesan

1 cup breadcrumbs
5 tbsp olive oil
1 tsp salt
12 oz pasta such as linguine or fettuccine
3 tbsp olive oil
4 cloves garlic- thinly sliced
3 tbsp fresh lemon juice
1/4 tsp dried crushed rep pepper flakes
1 bag fresh baby spinach
1/2 cup grated Parmesan cheese
1. Toss breadcrumbs with the oil. Spread evenly on a baking sheet and
bake in a preheated 375ºF oven until golden, about 5 minutes. Cool and
sprinkle with salt.
2. Cook pasta in a large pot of boiling salted water and cook until
pasta is tender. Drain, reserving 1/2 cup of cooking liquid.
3. Meanwhile, heat oil in a saucepan over medium heat. Add the garlic,
lemon juice and red pepper flakes and sauté until garlic turns golden,
about 5 minutes.
4. Toss the pasta with the oil mixture and the spinach in a large bowl
until spinach wilts, adding reserved pasta water as needed. Divide the
pasta between 4 plates. Sprinkle with the breadcrumbs and grated
Parmesan cheese.
Serves 4 guests.
