Pear Apricot Chutney
www.sweetpeaspantry.com3 cups diced peeled firm pears
1 ½ cups quartered dried apricots
¾ cup brown sugar
¾ cup cider vinegar
1 finely chopped onion
½ cup currants
¼ cup finely chopped crystallized ginger
1 tbsp mustard seeds
½ tsp ground coriander
½ tsp salt
½ tsp pepper
- In a saucepan, combine pears, apricots, sugar, vinegar, onion,
currants, ginger and spices. Bring to the boil. Reduce heat and simmer
for 25 minutes, until thick enough to mound on a spoon.
- Let cool. Refrigerate for up to 1 week. Serve with glazed ham.
Makes 3 cups.
