Swedish Cinnamon Biscotti

1 cup brown sugar
2 eggs
2 tbsp sour cream
½ tsp almond extract
2 ¾ cups flour
1 tbsp cinnamon
1 tsp baking powder
¼ tsp baking soda
¼ tsp salt
2/3 cup toasted almonds
1. In a mixer bowl, cream together butter and sugar until light and
fluffy. Beat in eggs, sour cream and almond extract.
2. In a bowl, combine flour, cinnamon , baking powder, baking soda and
salt. Add to creamed mixture until well blended.
Fold in nuts.
3. On a lightly floured surface, divide the dough in half. Form each
half into a log. Place on a parchment lined baking sheet.
Bake in a preheated 350ºF oven for 25 minutes. Remove from oven. Let
cool overnight.
4. With a serrated knife, cut into diagonal ½ “ thick slices. Return to
baking sheet, standing up.
Bake in a preheated 350ºF oven until dry, approximately 15 minutes.
Remove from oven. Let cool.
Makes 36 biscotti.
